Step preview
- Add glutinous rice to a clean medium bowl
- Soak with water - approx 1 hr (but no longer)
- Drain and transfer rice to TM5 bowl
- Add golden caster sugar, water, coconut cream and pink Himalayan salt flakes
- Cook - approx 25 min, 100°C, reverse speed 1
- Set aside in a seperate bowl
- Without cleaning, add coconut cream, golden caster sugar and pink Himalayan salt flakes to the TM5 bowl
- Cook - approx 7 min, 100°C, speed 3
- Remove from bowl and set aside
- Without cleaning the bowl, place the mango and lime juice into Thermomix bowl
- Blend with MC fitted - approx 30 sec, speed 8
- Scrape down sides of TM5 bowl
- The mango should be blended into a silky smooth texture. Repeat blending if needed
- To assemble, place some of the cooked rice into each serving glass, followed by the mango puree, then lashings of the coconut syrup and garnish with the mango cubes
