Step preview
- Line a clean baking sheet with parchment paper
- Add mixed nuts to the baking sheet
- Place into cold oven set to 200ÂșC and cook 8 minutes
- Remove from oven
- Whilst still warm, mix with pretzels and sprinkle generously with salt. Allow to cool
- Add butter, maple syrup, dark brown sugar, ground ginger, ground cinnamon and cayenne pepper to the TM5 bowl
- Cook - approx 5 min, Varoma, speed 2
- Beat egg white with a balloon whisk or other means
- Add beaten egg white to Thermomix bowl
- Blend with MC in place 5 sec/speed 6
- Pour over nuts and pretzels. Stir to coat evenly
- Return to the oven for 8 minutes
- When you remove them from the oven, stir to break apart, you may need to use two trays to have them be separate
- Wait until the mixture is fully cold
- Transfer content of baking sheet to large serving bowl
- Stir in milk chocolate and raisins to a clean large serving bowl
- Serve
