Step preview

  1. Line a clean baking sheet with parchment paper
  2. Add mixed nuts to the baking sheet
  3. Place into cold oven set to 200ÂșC and cook 8 minutes
  4. Remove from oven
  5. Whilst still warm, mix with pretzels and sprinkle generously with salt. Allow to cool
  6. Add butter, maple syrup, dark brown sugar, ground ginger, ground cinnamon and cayenne pepper to the TM5 bowl
  7. Cook - approx 5 min, Varoma, speed 2
  8. Beat egg white with a balloon whisk or other means
  9. Add beaten egg white to Thermomix bowl
  10. Blend with MC in place 5 sec/speed 6
  11. Pour over nuts and pretzels. Stir to coat evenly
  12. Return to the oven for 8 minutes
  13. When you remove them from the oven, stir to break apart, you may need to use two trays to have them be separate
  14. Wait until the mixture is fully cold
  15. Transfer content of baking sheet to large serving bowl
  16. Stir in milk chocolate and raisins to a clean large serving bowl
  17. Serve
