Step preview

  1. Add avocado, tinned sweetcorn and cherry tomatoes to a clean medium bowl
  2. Squeeze lime into the medium bowl
  3. Add a clean frying pan - medium-high heat
  4. Add - 5 min, medium-high heat
  5. Add - 1 min, medium-high heat
  6. Add ground cumin to the frying pan
  7. Remove from heat
  8. Add corn tortilla to the clean plates
  9. To serve, fill each tortilla with an even amount of the mushroom and black bean mixture and then top with the tomatoes, corn and avocado
  10. Add coriander
