Step preview

  1. Heat a griddle pan and drizzle with EVOO
  2. Cook the pineapple in batches until it's all nicely charred until charred then set aside
  3. To make the sauce, add yellow onion, garlic clove, red chili and extra virgin olive oil to the TM5 bowl
  4. Chop with MC in place 5 sec, speed 6
  5. Cook 5 min, Varoma, speed 1
  6. Remove from bowl and set aside
  7. Add apple cider vinegar, tomato paste, soy sauce, pineapple juice and cornstarch to the Thermomix bowl
  8. Mix with MC in place 5 sec, speed 6
  9. Add the onion mix and capsicums into the bowl
  10. Cook for 6 min, 100°C, reverse speed 1
  11. Add extra virgin olive oil to the frying pan
  12. Fry the chicken in a hot pan with EVOO until browned and cooked through
  13. To assemble, place rice noodles on a plate, top with capsicum, snow peas, grilled pineapple and chicken
  14. Pour sauce over the top
