A quick, easy, and colorful alternative to hummus, this spread/dip is great on toast, flatbreads, or with seasonal vegetables. You can use fresh peas if you have them, and frozen ones work just fine too. Served here on toast, topped with sliced baby radishes and sprouts.

  1. Add garlic clove and peas to a clean medium bowl then set aside
  2. Heat a clean frying pan - medium heat
  3. Add olive oil and shallot to the frying pan
  4. Cook until softened - 2 min, medium heat
  5. Transfer vegetables to frying pan
  6. Cook until tender - 2 min, medium heat
  7. Transfer content of frying pan to large mixing bowl
  8. Add olive oil, lemon, black pepper, sea salt and mint leaves to the vegetables
  9. Blend with stick blender until smooth - medium-low speed
  10. Season to taste
