- 65 g

Step preview
- Pre-heat oven - 175°C
- Grease a clean square pan with cooking spray or butter
- Add water to a clean saucepan
- Heat until boiling - high heat
- Add dates to the saucepan
- Cook - 5 min, medium heat
- Add baking soda to the saucepan and continue mixing
- Switch off the heat
- Set aside - 15 min
- Mix a clean stand mixer bowl into a fine paste then set aside - medium speed
- Add unsalted butter and granulated sugar to the stand mixer bowl
- Cream until light and fluffy - medium speed
- Add egg and vanilla extract to the stand mixer bowl
- Beat until combined - medium speed
- Add plain flour, wholemeal flour, salt and baking powder to the stand mixer bowl
- Transfer the pureed date mixture to the stand mixer bowl
- Mix until combined - medium-low speed
- Pour the batter into the greased pan
- Bake until skewer tests clean - 35 min, 175°C
- Remove from the oven
- Let cool completely in the pan
- Dust with powdered sugar
- Serve
