I don’t understand the whole baked doughnut craze. They’re healthier, I guess. They take forty-five minutes to make as opposed to three hours. But to me, the word “doughnut” connotes something golden and fluffy and fried. Something that feels weighty and substantial when you pick it up, and delightfully indulgent when you take a bite.

Step preview

  1. Add milk to a clean small glass bowl
  2. Heat - medium heat
  3. Sprinkle with active dried yeast
  4. Set aside until foamy - approx 5 min
  5. Mix
  6. Add egg, butter and granulated sugar to a clean stand mixer bowl
  7. Beat - medium speed
  8. Add and mix - medium speed
  9. Prepare a clean large mixing bowl
  10. Cover with plastic wrap and let rise - approx 1 hr
  11. Prepare a clean cutting board with parchment paper
  12. Turn out dough onto cutting board
  13. Roll out
  14. Cut out
  15. Prepare 2 clean baking sheets with parchment paper
  16. Transfer dough to 2 baking sheets
  17. Cover with kitchen towel and let rise - approx 45 min
  18. Add rapeseed oil to a clean stockpot
  19. Heat - 191°C, high heat
  20. Fry one by one until golden brown - approx 1 min
  21. Let cool with paper towels
  22. Add powdered sugar, cocoa powder and milk to a clean medium glass bowl
  23. Whisk until smooth
  24. Add sprinkles
