The Italian dessert par excellence. This coffee-flavoured dessert is made with ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa. This combination of ingredients becomes perfect if you add some marsala or brandy to the coffee before soaking the ladyfingers.

  1. Add egg yolk to a clean large mixing bowl
  2. Add sugar to the large mixing bowl
  3. Whip until frothy
  4. Add mascarpone cheese to the large mixing bowl gradually and continue mixing
  5. Add egg white to a clean large mixing bowl
  6. Whisk
  7. Add sugar to the large mixing bowl gradually while whisking
  8. Transfer one spoonful content of egg whites to egg yolks and sugar
  9. Mix vigorously
  10. Fold in the rest of the egg whites a little at a time
  11. Layer one third of the cream in a rectangular pan
  12. Add coffee to a clean small bowl
  13. Soak sponge fingers in the small bowl one by one
  14. Layer half of the sponge fingers in the rectangular pan
  15. Layer one third of the cream in the rectangular pan
  16. Layer the rest of the sponge fingers in the rectangular pan
  17. Layer the rest of the cream in the rectangular pan
  18. Sprinkle with unsweetened cocoa powder
