Jackfruit is a vegan’s dream — what starts as an unassuming green fruit beautifully absorbs flavor, and it’s meaty texture makes it a fun, plant-based alternative to pulled pork. Perfect for BBQ sandwiches and nourish bowls! This recipe is used in the THERMOfit Pulled Jackfruit Nourish bowl. Cans of jackfruit in brine can be found in most Woolworths (Australia) and in Asian supermarkets. This recipe is easily doubled — increase the shredding time in step four for a few extra seconds. Gluten-Free, Vegan, Dairy-Free, Nut-Free, Paleo, Moderate Carbohydrates.

Step preview

  1. Pre-heat oven - 200°C
  2. Line a clean baking sheet with parchment paper
  3. Add onion, garlic clove and ginger to the TM5 bowl
  4. Blend with MC in place 3 sec, speed 6
  5. Scrape down sides of TM5 bowl
  6. Add coconut oil, canned jackfruit, chilli flakes, paprika, salt, black pepper, tomato purée, apple cider vinegar and coconut sugar to the TM5 bowl
  7. Cook 4 min, 100°C, reverse speed 1
  8. Blend 3 sec, speed 4
  9. Transfer contents of TM5 bowl to baking sheet
  10. Bake - 15 min, 200°C
  11. Mix
  12. Bake until light golden - 10 min, 200°C
  13. Serve
