  1. Add lettuce to a clean work surface
  2. Prepare the Lettuce Cups by taking each leaf from the stem carefully and rinsing
  3. You might find it useful to either double cup the lettuce leaves by using 2 per serve (especially if they tear) or make the filling smaller amounts and have 4 small lettuce cups per serve
  4. Add canned mixed beans to the work surface
  5. Arrange nutritional yeast, greek yogurt, avocado, cherry tomatoes and hemp seeds in the work surface carefully
  6. Season with salt & pepper
  7. Garnish with coriander and lime
  8. Serve
