I remember looking at a dessert menu at a restaurant once with my dad and sister and reading ‘Death by Chocolate.’ “That,” my Dad said “we need to order. Death by chocolate is how I want to die!” I was probably 12 at the time so I did not quite understand the humor there. But now, death by chocolate is what I think about when I make and eat these muffins. So rich, so full of chocolate, so good! Oh and brownie points – no butter or oils are used to make these muffins! I also snuck in some whole-wheat flour, though this is optional!

Step preview

  1. Pre-heat oven - 175°C
  2. Line a clean muffin pan with paper muffin cups
  3. Add applesauce, honey, cane sugar and greek yogurt to a clean stand mixer bowl
  4. Mix until combined - medium speed
  5. Add egg, vanilla extract and hot coffee to the batter
  6. Mix until combined - medium heat
  7. Add unbleached flour, wholemeal flour, cocoa powder, baking powder, bicarbonate of soda and kosher salt to a clean large mixing bowl
  8. Whisk briefly until combined
  9. Transfer half of dry ingredients to batter
  10. Mix until just combined - low speed
  11. Transfer the rest of dry ingredients to batter
  12. Mix until just combined - low speed
  13. Add dark chocolate chips to the batter
  14. Fold gently
  15. Transfer batter to muffin pan evenly
  16. Bake until skewer tests clean - 25 min, 175°C
  17. Let cool slightly
  18. Serve
