This easy microwave peanut brittle such a delicious treat for the holidays! Make sure you have your baking pan greased and lined in advance as once it comes out of the microwave you’ll have to move quickly. This sweet and salty snack makes an excellent gift.

Step preview

  1. Line a clean baking sheet
  2. Grease with butter curler then set aside
  3. Combine granulated sugar and corn syrup with a clean small bowl
  4. Heat - 3 min 30 sec, high heat
  5. Stir roasted salted peanuts into the small bowl
  6. Cook until lightly browned - 3 min, high heat
  7. Add butter and vanilla extract to the small bowl
  8. Heat - 1 min 30 sec, high heat
  9. Stir with tablespoon until well combined
  10. You will need to work quickly for the next step, so be sure to have your buttered sheet ready to go
  11. Add bicarbonate of soda to the small bowl
  12. Stir with tablespoon until foamy
  13. Pour mixture into baking sheet quickly
  14. Do NOT use a spoon to spread the mixture around
  15. Instead, gently rotate the pan to spread the mixture around until it is about 1/2 inch thick
  16. Work quickly, because it will began hardening very fast
  17. Let the peanut brittle cool for at least 1/2 hour or until it is hard and smooth to the touch
  18. When it is cooled, break the candy into small pieces and store in an air-tight container
