To make tzatziki sauce: In a medium bowl combine all the ingredients, mix well. ⅛ tsp black pepper 1 tsp olive oil 1 tsp salt 2 Tbsp Lemon juice ¼ cup parsley (chopped) 1 cup plain greek yogurt 1 medium cucumber (small diced/seeded) 1 clove garlic (minced)

Step preview

  1. Add olive oil, yellow onion and garlic clove to a clean ceramic baking dish
  2. Mix well
  3. Cook - 7 min, Combo 1
  4. Add baby kale mix to the ceramic baking dish
  5. Stir and place dish back in oven
  6. Microwave - 3 min, 1000 W (High)
  7. Let cool - 5 min
  8. Add egg, lemon juice, salt and black pepper to a clean large mixing bowl
  9. Whisk until smooth
  10. Add feta cheese to the large mixing bowl and mix
  11. Add breadcrumbs, quinoa and all purpose flour to the large mixing bowl
  12. Mix well, add in kale and combine
  13. Form mixture into 5 patties (use ½ Cup of quinoa mixture for each patty)
  14. Line the Airfry basket with parchment paper
  15. Place formed patties on top
  16. Place enamel tray in the oven, followed by the wire rack. Then, place Air fry basket on top of the wire rack
  17. Air fry - 10 min
  18. After time is done, turn the patties over and place them back to the oven
  19. Air fry - 10 min
  20. Serve with tzatziki sauce
