- Pre-heat - 200°C, Convection bake
- Add olive oil, salt and red onion to a clean medium bowl
- Toss until coated
- Add salt, russet potato and olive oil to a clean medium bowl
- Toss until coated
- Add heavy cream, mascarpone cheese and gorgonzola cheese to a clean medium bowl
- Mix until well combined
- Add frozen cauliflower pizza crusts to a clean work surface
- Spread the cheese mixture filling evenly all over the crust
- Scatter onion mixture over Pizza
- Scatter potatoes over Pizza
- Scatter brown mushrooms over the Pizza
- Season with black pepper
- Transfer Pizza to Enamel Tray
- Place wire rack in the oven and place enamel tray on top
- Bake until golden brown - 12 min, Convection bake
- Serve
