Step preview

  1. Add all purpose flour, baking soda, baking powder, salt, ground cloves, ground cinnamon and ground ginger to a clean small bowl
  2. Whisk until combined
  3. Add bourbon, vanilla extract and molasses to another clean small bowl
  4. Mix with tablespoon then set aside
  5. Add unsalted butter, dark brown sugar and egg to a clean large mixing bowl
  6. Beat until well blended - medium speed
  7. Transfer molasses mixture to batter and continue mixing
  8. Transfer dry ingredients to batter gradually and continue mixing until combined
  9. Divide batter into 2 halves
  10. Roll each half into a log form and wrap each piece of dough with plastic
  11. Let stand on work surface for at least 2 hours, up to 6 hours
  12. Slice rolls into approximately ¼” thin slices
  13. Place slices on parchment paper on enamel tray
  14. Top with candied ginger
  15. Bake - 7 min, 190°C, Convection bake
