Step preview
- Soak wooden skewers in water for 20-30 minutes to prevent burning
- Add rice wine, water, mirin, soy sauce, scallion and light brown sugar to a clean medium bowl and mix
- Add chicken thigh to a clean large mixing bowl
- Transfer half of marinade to chicken
- Marinate in fridge - 1 hr
- Add onion and green bell pepper to a clean skewer
- Skewer marinated chicken by folding each piece of chicken in half and inserting the skewer, follow with a vegetable piece, then chicken piece then vegetable piece until each skewer has about 5-6 pieces of chicken
- Feel free to add as many veggies as desired
- Prepare the wire rack
- Brush the wire rack with olive oil
- Transfer chicken skewers to wire rack
- Cook - 15 min, Combo 1
- Brush the rest of marinade onto the skewers
- Place back into oven
- Cook - 10 min, Combo 1
- Then garnish with scallion
- Serve
