The combination of shrimp with pasta is my favorite dinner combination in the world. It makes sense since it brings together my two favorite foods, ha! Coming up with different flavors and ways of preparing it is a lot of fun and always makes me think of my Nana Lulu. I can never think of pasta without thinking of her!

Step preview

  1. Add pasta, water and salt to a clean large saucepan
  2. Heat until boiling - high heat
  3. Continue to cook - approx 7 min
  4. Add avocado, arugula, olive oil, pine nuts, parmesan cheese, almond milk and sea salt to a clean blender jug
  5. Blend until creamy then set aside
  6. Add olive oil to a clean frying pan
  7. Heat over high heat
  8. Add shrimp
  9. Cook for 3 min
  10. Add lime, lime, sea salt, chili powder, smoked paprika and red pepper flakes
  11. Cook - approx 1 min, low heat
  12. Add cherry tomatoes
  13. Spoon purée into shrimp while stirring occasionally
  14. Drain pasta
  15. Transfer pasta to shrimp
  16. Toss gently until combined
  17. Top with parmesan cheese
  18. Serve
