This recipe is sometimes also called Standing Rib Beef Roast. Older cookbooks will sometimes instruct you to remove excess fat from the roast. "Excess" fat is any fat more than an inch thick on the roast. Fat is what you need to give the roast flavor and to make it juicy and tender. Prime rib is expensive and you are paying good money for that fat so leave it on. Your butcher should have removed any excess fat.

Step preview

  1. Add standing rib roast to a clean work surface
  2. Sprinkle with salt
  3. Cover loosely with parchment paper
  4. If your butcher hasn't already done so, cut the bones away from the roast and tie them back on to the roast with kitchen string
  5. Pre-heat oven - 260°C
  6. Pat beef dry with paper towels
  7. Season with salt & pepper
  8. Transfer beef to large roasting dish
  9. Bake until browned - 15 min, 260°C
  10. Bake - 12 min, 160°C
  11. Roast in oven until thermometer registers 115°F/45°C for rare or 120°F/50°C-130°F/55°C for medium
  12. Transfer onto cooling rack
  13. Let cool completely
  14. Cover loosely with foil
  15. Let rest - 30 min
  16. Cut away strings, remove bones, slice roast
