Step preview

  1. Place all ingredients in the large/deep gastro tray
  2. Combine until mixture comes together and cover - 4 hr 30 min
  3. Leave the tray outside the oven for 30min and then start dicing the belly
  4. When finish simply cover the meat with the remaining liquids. Do not use all the liquids, use just the right amount to cover the meat.
  5. Place the end product back in the container and leave in blast chiller to cool downt
  6. Add liquid to a clean Dutch oven
