Vindaloo is a spicy curry, this is not too bad, but tweak it to taste by upping or downing the chillies! Dried chillies are always hotter than fresh.

Step preview

  1. Place all dry spices into a dry frying pan
  2. Toast - high heat
  3. Tip into thermomix bowl
  4. Add evoo, onion, ginger, garlic and chillies
  5. Chop with MC on - 3 sec, speed 5
  6. Sauté - 5 min, Varoma, speed 5
  7. Add tomatoes, vinegar, salt and beef
  8. Cook - 10 min, 100°C, reverse gentle stir
  9. Serve with fresh coriander, sliced chillies, steamed rice, yogurt, chopped cucumber and tomato
