Step preview

  1. In a small bowl, combine flour salt and oil until mixture resembles bread crumbs
  2. Gradually stir in water until smooth
  3. Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes
  4. Cover and let rest for 30 minutes
  5. Meanwhile, add oil to a frying pan
  6. Heat over medium heat
  7. Add onion and potato to the frying pan
  8. Cook and stir until potato is almost tender, 5-7 minutes
  9. Add curry powder, garlic clove, ginger, ground cumin, ground coriander and cayenne pepper to the frying pan
  10. Cook 2 minutes longer
  11. Add ground chicken to the frying pan
  12. Cook and stir until chicken is no longer pink and potato is tender, 5-6 minutes
  13. Stir in peas and salt
  14. Remove from heat
  15. Divide dough into eight pieces
  16. Roll one piece of dough into a 9x6-inch oval
  17. Cut dough in half
  18. Moisten straight edge with water
  19. Bring one corner of half moon up to meet the other corner of the half moon, forming a cone
  20. Pinch seam to seal
  21. Fill with about 2 tablespoons chicken mixture
  22. Moisten curved edge of dough with water; fold over top of filling and and press seam to seal
  23. Repeat with remaining dough and filling
  24. Add oil to a clean fryer
  25. Heat - 190°C
  26. Add samosas, a few at a time, into hot oil
  27. Fry until golden brown, 2-3 minutes on each side
  28. Drain on paper towels
  29. Serve warm with chutney if desired
