This is a miracle soup. We LOVED it. It is pretty much throw what you have in the veggie drawer soup, and it is good! SO good. I recommend Hey Pesto (recipe on Drop) for the pesto.

Step preview

  1. Add dried chickpeas and enough water to cover them in a clean medium bowl
  2. Soak for at least 24 hours
  3. Drain the water
  4. Place onion, garlic and olive oil into the Thermomix bowl
  5. Chop with MC on - 4 sec, speed 5
  6. Sauté - 5 min, Varoma, speed 1
  7. Add all remaining ingredients, including drained chickpeas, but without the pesto and fresh herbs
  8. Cook - 1 hr 30 min, 100°C, reverse speed 1
  9. Check that the chickpeas are soft enough to your liking, if they are not, add more cooking time
  10. Serve with a generous swirl of pesto and fresh herbs
