Step preview

  1. Mix together cornflour and soy sauce, then mix in remaining ingredients
  2. Pour 1 tbsp of sauce over the chicken and mix to coat
  3. Set aside to marinate for 10 minutes
  4. Add water to a saucepan for cooking the noodles
  5. Cook the noodles according to the packet instructions, then drain
  6. Add oil to a wok or large fry pan
  7. Heat oil over high heat
  8. Add garlic
  9. Stir fry for 10 seconds or until it starts to turn golden
  10. Add the chicken
  11. Stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute
  12. Add the cabbage, carrot, and the white pieces of shallots from the base of the stalk
  13. Stir fry for 1 1/2 minutes until the cabbage is mostly wilted
  14. Add the noodles, sauce and water
  15. Stir fry for 1 minute, tossing constantly
  16. Add bean sprouts and remaining shallots/scallions
  17. Toss through for 30 seconds or until the bean sprouts just start to wilt
  18. Remove from heat and serve immediately
