Step preview

  1. Add sourdough starter, bread flour, brown sugar, salt, water and quick-rise yeast to a clean stand mixer bowl
  2. Knead until dough forms while mixing - approx 4 min, low speed
  3. Spray inside of a large mixing bowl with oil.
  4. Transfer content of stand mixer bowl to large mixing bowl
  5. Turn dough to coat with grease, and cover with plastic wrap.
  6. Let rise until doubled - approx 1 hr 15 min
  7. Transfer content of large mixing bowl to work surface
  8. Knead gently on lightly-floured surface
  9. Divide into 12 equal pieces
  10. Shape tightly and roll into a ball shape
  11. Line a baking sheet with parchment paper.
  12. Transfer content of work surface to baking sheet
  13. Cover and let rise - approx 30 min
  14. Bake until lightly browned - 25 min, 180°C
  15. Transfer content of baking sheet to cooling rack
