Step preview

  1. In a small mixing bowl add the glass noodles cover with boiling water and set to the side to cook for 3-5 mins
  2. In a large mixing bowl add ground pork, chopped prawns, diced scallions, chopped chilli, grated carrot, crushed garlic, lime zest, 1 whole egg, fish sauce, sesame oil, rice vinegar and tamari sauce
  3. Once noodles are cooked drain and rinse them with cold water
  4. Chop noodles into one inch pieces and add to the large mixing bowl
  5. Using your hands combine all ingredients well
  6. Now its time to get rolling
  7. First set up rolling station including, your large mixing bowl with pork and prawn mix, the rice paper, 1 medium bowl with lukewarm tap water, 1 damp tea towel and a large plate with a small coating of cooking oil
  8. Add 1 rice paper to the bowl of water for 10-12 seconds
  9. After 10 seconds remove from the water and lay the rice paper out on the damp towel
  10. Add 1 table spoon of pork mix to the bottom end of the rice paper in the middle
  11. Roll the rice paper tightly over the pork and then fold in either side of the paper and continue rolling until you have a perfect mini roll
  12. Add made roll to the oiled plate and repeat process until all mixture is gone
  13. Do not let made rice rolls touch as they will stick
  14. Once you have made all your rolls, now make your sauce before frying
  15. To make the sauce, in a small bowl add, fish sauce, rice vinegar, lime juice, sliced chilli, maple syrup, soy sauce and grated ginger, whisk to combine and place in serving bowl
  16. Spray air fry basket with oil and add as many rolls you can fit without rolls touching
  17. Set Panasonic 4-in-1 oven to air fry and air fry rice rolls
  18. Once timer is up serve rice rolls immediately with dipping sauce and repeat air fry step with any remaining rolls
