Step preview

  1. In a large microwave safe bowl, add the diced onions, thinly sliced garlic and olive oil
  2. Microwave for 4 mins to soften onions & garlic
  3. Remove onions and garlic from microwave and add the kale, rosemary, cumin, coriander, cayenne pepper, salt and some pepper. Mix well to combine
  4. Add in the lemon juice, white beans and 4 cups of water
  5. Cover bowl with clingfilm/microwave safe lid and microwave
  6. While stew is cooking prepare your toppings
  7. In a small bowl mix, mayo, lemon and crushed garlic
  8. Serve in a large bowl with a spoon of lemon garlic mayo and a generous sprinkle of toasted breadcrumbs
