Step preview

  1. In a medium-large microwave safe bowl add diced onions with a drizzle of olive oil, and season with some salt and pepper
  2. Microwave on high to soften onions
  3. Add the chorizo chunks to the soften onions
  4. Now add espelette, 1 tin of tomatoes, red wine and chickpeas, mix well to combine
  5. Microwave - 4 min, 1000 W (High)
  6. Microwave - 2 min, 1000 W (High)
  7. Remove and serve in a medium bowl
