Step preview

  1. Lay a double layer of two squares of grease proof paper on a microwave safe plate
  2. In the middle of the paper add hake
  3. Add the cut cherry tomatoes around the fillet, the scallions and crushed garlic on top
  4. Crumble fish fillet with feta cheese, then drizzle with olive oil, add juice of lemon and wine and season with salt and pepper
  5. Wrap fish up like a parcel, bringing both lengths together and rolling them down and then either ends rolling up to seal the fish inside
  6. Transfer plate to the microwave and microwave
  7. Open parcel up carefully as its hot in there, and enjoy as is or with some rice or potatoes
