These meatballs are our Favourite. We make a big batch, put half in the freezer and enjoy half now. Either enjoy them alone or with some spaghetti. They are a firm favourite in our house hold

Step preview

  1. In a microwave safe bowl add diced onions, crushed garlic, olive oil and season with salt and pepper
  2. Place bowl in panasonic 4-in-1 oven to soften onions
  3. Remove soften onions from the microwave and add tinned tomatoes, red wine, leaves from basil stalks and mix to combine
  4. Add a microwave safe lid/plate on top of bowl and return to the Panasonic 4-in-1 for a further 6 mins
  5. While sauce is cooking prepare the meatballs
  6. In a mixing bowl add the mince, breadcrumbs, salt, pepper and 1 egg and mix to combine
  7. Form mixture into balls and place in a microwave safe baking dish, making sure the dish fits comfortably in the microwave, i.e. can turn around in the microwave without getting stuck
  8. Once meatballs have been formed, cut mozzarella into slices and put one slice in between each meatball
  9. Take the tomato sauce from the microwave and pour all the sauce over the meatballs, making sure each meatball has some sauce on top
  10. Cover the dish with microwave safe cling film/lid and return to the Panasonic 4-in-1 for 12 mins
  11. After 12 mins remove clingfilm carefully from the dish, test one of the meatballs making sure its cooked through
  12. Season again with some salt and pepper and enjoy with a grating of parmesan cheese over spaghetti or just as is
