This creamy asparagus linguine is something my Mum used to make me when I was younger. It was something I would crave, a comforting bowl of green goodness, and now it is something I whip up whenever I spot good asparagus

Step preview

  1. Trim the ends off the asparagus, only 1cm to clean up the ends, as we will be using the whole asparagus tips and bottom
  2. Cut the asparagus in half
  3. In a microwave safe bowl add the asparagus halves both tips and bottom,2 garlic cloves, drizzle with a generous amount of olive oil and season with salt and pepper
  4. Place a microwave safe lid/plate on top and microwave for 4 mins or until asparagus becomes tender
  5. While asparagus is in the microwave, par cook your linguine for 6 mins
  6. Drain linguine reserving 1 cup of pasta water
  7. When asparagus is done remove asparagus tips and set aside
  8. To the asparagus bottoms and garlic add the zest of 1 lemon, salt, pepper, butter, cream and spinach
  9. Blend asparagus mix
  10. Add in the par cooked linguine with the pasta water and mix well
  11. Place the microwave safe plate back on top and return to the microwave to finish cooking pasta
  12. After 4 mins test pasta, if done to your liking remove from microwave and add in the asparagus tips, crushed garlic, lemon juice , and parmesan, mix well to combine
  13. Serve immediately with some more grated parmesan on top and cracked black pepper
