Step preview

  1. In a mixing bowl whisk eggs, milk, salt and pepper
  2. Add in a small handful of spinach, cherry tomato slices and grated cheese. Mix to combine
  3. Grease a wide microwave safe bowl with butter and pour in egg mix
  4. Cover bowl with microwave safe lid/plate
  5. Remove from microwave and keep lid on while you make bacon
  6. On a microwave safe plate put down 2 layers of kitchen paper
  7. Place the bacon on top of the kitchen paper and add another two sheets of kitchen paper on top of the bacon
  8. Microwave for 2-3 mins, checking after 2 to see if it's crispy enough, if not add the final min
  9. When bacon is done, remove lid from eggs, add sliced avocado, crispy bacon and drizzle with hot sauce
