Traditionally served on Halloween in Ireland, this loaf cake is full of dried figs and hazelnuts. It's perfect as a quick tea cake to make year-round. Spread with butter and eat while still warm!

Step preview

  1. Add raisins, dried figs and hot earl grey tea to a clean large mixing bowl
  2. Soak fruit overnight if possible, or for at least one hour
  3. Pre-heat oven - 170°C
  4. Grease a clean loaf pan
  5. Add orange to the batter
  6. Add light brown sugar, ground cinnamon, apple pie spice mix and egg to the batter
  7. Mix briefly until combined
  8. Add all purpose flour, baking powder and hazelnuts to the batter
  9. Mix until combined
  10. Transfer batter to loaf pan
  11. Bake until skewer tests clean - 50 min, 170°C
  12. Let cool - approx 5 min
  13. Slice and eat warm from the oven, with a little butter
