Step preview

  1. Pre-heat oven - 160°C
  2. Place ham on rack in a roasting pan
  3. Score
  4. Add enough water to come up about 1/2-inch up the sides of the pan
  5. Cover with foil
  6. Bake, covered, for 2 hours or until internal temperature reaches 100F to 110F, adding more water if needed
  7. Add maple sugar, wholegrain mustard, apple cider vinegar and pomegranate juice to a clean saucepan
  8. Heat until just boiling then reduce heat
  9. Cook, stirring occasionally, for 6 to 8 minutes or until slightly thickened and syrupy
  10. Uncover meat
  11. Pre-heat oven - 190°C
  12. Bake - 40 min, 190°C
  13. Baste every 10 minutes
  14. Cover with foil
  15. Let rest - approx 20 min
  16. Slice with chef's knife
  17. Serve immediately
