Serve this chicken parmesan with some spaghetti or a simple green salad and you have the perfect mid week meal. Crispy breaded chicken, topped with your favourite marinara sauce, some zing from a few capers and topped off with some melted mozzarella cheese. All done in your Panasonic 4-in-1 oven air fryer

Step preview

  1. Using a sharp knife carefully butterfly your chicken breasts, by placing your hand on the chicken breast and slicing it open horizontally, cutting almost to the other side and then open it up like a book
  2. Add flour, salt and pepper to a shallow bowl or a plate
  3. Add 1 beaten egg to different bowl
  4. Add panko breadcrumbs, parmesan, garlic powder, red pepper flakes, salt and pepper to a plate and mix to combine
  5. Lightly coat your air fryer basket with some oil, using a spray oil or a pastry brush
  6. Now to coat our chicken breasts, first, dip your chicken into the flour and shake off any access flour
  7. Now dip your floured chicken into your egg, letting any access egg drip off back into the bowl
  8. Finally press the egg coated chicken breast into the panko and parmesan mixture, making sure each side gets an even coating
  9. Gently shake off any excess crumbs and lay the chicken on your greased air fryer basket
  10. Repeat with any remaining chicken
  11. Once all chicken is coated, place the air fryer basket on the wire rack in your Panasonic 4-in-1 oven, and air fry for 10 mins
  12. After 10 mins gently flip chicken
  13. Return to oven and air fry for a further 5 mins
  14. After 5 mins, carefully remove the air fryer basket using an oven glove
  15. Add 1 tablespoons of marinara sauce onto each of your breaded chicken breasts and spread it out with the back of your spoon. Leave the edges of the chicken with no sauce so it stays nice and crispy
  16. Scatter 1/2 a teaspoon of capers on top of the tomato sauce on each chicken breast and season with some more salt and pepper
  17. Now tear up the mozzarella and scatter on top of the tomato sauce and capers
  18. Air fry - approx 5 min
