A sticky honey sauce over firm tofu and broccoli with roasted cashews is one of our favourite vegetarian dishes for during the week

Step preview

  1. Wrap the tofu block in a clean kitchen towel
  2. Weigh down the wrapped tofu with some books for 15 mins
  3. Break the broccoli into florets and add to a mixing bowl
  4. Remove the tofu from the kitchen towel and cut tofu into cubes
  5. Add the tofu to the broccoli
  6. Add oil, salt, pepper and garlic powder to the mixing bowl and mix well to combine
  7. Lightly oil the air fryer basket and add the broccoli and tofu in a single layer
  8. Air fry for 15 mins
  9. After 15 mins remove the basket from the Panasonic 4-in-1 Oven
  10. Shake the basket and return to air fry for a further 15 mins
  11. Add cashews to the mixing bowl
  12. Add the air fried tofu and broccoli back into the mixing bowl and set aside
  13. In a microwave-safe bowl, add honey, soy sauce, crushed garlic, grated ginger, water, sriracha and rice vinegar
  14. Mix well to combine
  15. Heat in the microwave for 1 min on High
  16. In a small bowl whisk together cornstarch and water
  17. Add the cornstarch mix to the microwaved sauce
  18. Whisk together and heat for a further 2 mins on High
  19. Add the sticky sauce to the tofu and broccoli mix
  20. Drizzle with sesame oil and serve with cooked rice
