Step preview

  1. Cut the cauliflower into small florets and add them to a mixing bowl
  2. Add the spices, oil, ginger and garlic to the cauliflower and season with salt and pepper
  3. Mix well to combine and set aside
  4. Add a glug of olive oil and the diced onion to the crispy pot
  5. Place the lid on top and microwave on high for 4 mins
  6. Add the cauliflower and spices mix to the softened onions
  7. Mix well
  8. Replace the lid and microwave on high for 2 mins
  9. Add the lentils, salt, hot stock and coconut milk to the cauliflower mix
  10. Carefully mix and replace lid
  11. Microwave on high for 8 mins
  12. Remove the lid and stir in the remaining coconut milk
  13. Place the lid and microwave on High for a further 4 mins
  14. Remove the lid and stir in the lemon, cashews and sultanas
  15. Replace lid and let sit for 5 mins
  16. Serve with cooked rice, mango chutney and cilantro
