Step preview

  1. Season each chicken leg with salt and pepper on each side
  2. Add the oil to the inner pot
  3. Pre-heat inner pot on Sauté
  4. When the Instant Pot Pro Plus has finished pre-heating, add the chicken legs in batches if needed and sear on both sides for 2.5 mins
  5. When all legs have been seared, remove them from the inner pot and place them on a cutting board
  6. Add the chorizo and onion wedges to the inner pot and sauté for 3.5 mins while stirring
  7. Add the wine, canned tomatoes and salt to the inner pot and mix well
  8. Add the chicken legs back into the sauce
  9. Secure the lid onto the Instant Pot Pro Plus
  10. Pressure cook 12 mins on Max, then allow for Natural Release 5 mins, then Quick Release the remaining pressure
  11. Serve chicken leg over cooked potato of choice and a generous ladle of sauce making sure to get some chorizo and onion pieces on each dish
