A flavoursome curry for the family to enjoy. This curry is made with beef but would also be just as delicious with lamb or chicken thighs. If you do not like your curry too spicy reduce the chilli to your liking, or up it if you like a nice spice kick

Step preview

  1. To a small bowl add the garlic, ginger and spices
  2. Leave to the side until needed
  3. Add the oil to the inner pot
  4. Pre-heat the inner pot using Sauté, High
  5. Once the inner pot has finished Pre-heating add the onions and sauté mixing for 3 mins
  6. Add all the spices from the small bowl and oil to the inner pot and mix well for 30 seconds
  7. Add the stock cube, the beef, sweet potato and mix well to get a coating of spices on everything
  8. Add the water, mix to combine
  9. Secure the lid onto the Instant Pot Pro Plus
  10. Pressure Cook on Max for 25 mins, then allow for Natural release 10 mins, then Quick release the remaining pressure
  11. Carefully remove the lid
  12. Using a slotted spoon remove the beef pieces and place them in a bowl
  13. In a small bowl mix together the corn starch and water to make a corn starch slurry
  14. Add the Slurry, and cilantro to the inner pot and set to Sauté for 2 mins
  15. Simmer until the sauce has thickened
  16. When the sauce has thickened turn off the Instant Pot Pro Plus, add back in the beef and stir in the spinach
  17. Serve the curry with some cooked rice, a spoon of yogurt, mango chutney and some crushed peanuts
