Step preview
- Pre-heat oven - 175°C
- Line a clean baking sheet with parchment paper
- Add granulated sugar and egg to a clean large mixing bowl
- Beat until pale and light then set aside - approx 5 min
- Add all purpose flour, baking powder, salt and ground cardamom to a clean medium bowl
- Whisk briefly
- Transfer dry ingredients to dough
- Add vanilla extract to the dough
- Mix together until well combined
- Add dark chocolate, blanched almonds and dried apricots to the dough
- Mix briefly until combined
- Turn out on lightly-floured surface
- Shape
- Transfer dough to baking sheet
- Bake until firm - 20 min, 175°C
- Let cool - 15 min
- Slice
- Arrange
- Reduce oven temperature to 160°C (320°F)
- Bake - 15 min, 160°C
- Let cool onto cooling rack
