A delicious christmas cake for the family to enjoy. You can make this weeks in advance of christmas or you can make it the day before serving, either way it will be delicious. You can ice this christmas cake the traditional way or decorate with whole almonds like we like to do, get creative

Step preview

  1. Add the dried fruit, butter, orange zest, sugar, brandy, lemon and orange juice to the inner pot and mix to combine
  2. Secure the lid onto the Instant Pot Pro Plus
  3. Pressure Cook on Max for 5 mins and allow for Quick release
  4. Carefully remove the lid
  5. Add the contents of the inner pot into a large mixing bowl, using a spatula to get everything out of the pot
  6. Let cool for 1 hour
  7. To the cooled fruit add the rest of the ingredients and mix well until you can't see any more flour
  8. Grease and line your cake tin with parchment paper
  9. Add the cake mixture to the lined tin and smooth out the top
  10. Cover the cake tin tightly with two layers of foil
  11. Add water to the inner pot with the steaming rack and using a trivet lower the cake into the inner pot
  12. Secure the lid onto Instant Pot Pro Plus
  13. Pressure Cook on Max for 1 hour 10 mins and allow for full natural pressure release
  14. Once the pressure has been released carefully remove the cake
  15. Remove the foil and let the cake cool in the tin overnight on the counter
  16. The next day, cover the cake in plastic wrap until ready to serve or ice the cake with fondant icing until ready to serve
