Step preview

  1. To a medium microwave dish add the the onion, ginger, oil and mix to combine
  2. Microwave on High for 2 mins
  3. Add the curry paste, garlic, coconut milk, salt and water and mix to combine
  4. Add the sweet potato and mix well
  5. Microwave on High for 8 mins
  6. Mix and microwave for a further 2 mins
  7. Add the tofu and mix well
  8. Microwave on High for a further 2 mins
  9. Mix in the spinach and cilantro
  10. Taste for seasoning
  11. Serve over cooked rice and enjoy
