Step preview
- Add cornstarch, all purpose flour, baking powder and baking soda to a clean medium bowl
- Whisk together until combined
- Add unsalted butter and granulated sugar to a clean large mixing bowl
- Cream together until light and fluffy
- Add egg yolk, vanilla extract and brandy to the dough
- Mix briefly
- Add dry ingredients to dough gradually while mixing
- Wrap with plastic wrap
- Chill in fridge - 1 hr
- Pre-heat oven - 175°C
- Line 2 clean baking sheets with parchment paper
- Roll out dough
- Cut into rounds
- Transfer dough to 2 baking sheets
- Bake until browned at edges - 12 min, 175°C
- Transfer onto cooling rack
- Spread with dulce de leche
- Dust with powdered sugar
