  1. To a microwave safe bowl add the miso paste, peanut butter, soy sauce, sriracha, maple syrup and ginger
  2. Add the water and using a hand whisk whisk the mixture together
  3. Add the instant noodles and the zucchini chunks
  4. Place a microwave safe plate on top
  5. Microwave on High for 4 mins
  6. Mix well and add the bok choy
  7. Replace the plate and microwave for a further 2 mins
  8. Add the sweetcorn and any other toppings you like and serve hot
