Step preview

  1. Add all purpose flour, baking powder, baking soda, sea salt and ground cinnamon to a clean large mixing bowl
  2. Whisk together
  3. Add buttermilk and egg yolk to a clean medium bowl and mix
  4. Add unsalted butter to a clean small bowl
  5. Melt in microwave and set aside
  6. Add egg white to a clean stand mixer bowl
  7. Whisk until stiff peaks form
  8. Transfer egg yolk and buttermilk mixture to dry ingredients
  9. Mix until combined
  10. Mix melted butter into the batter until combined
  11. Carefully mix one quarter of the egg whites into the batter until combined
  12. Fold the rest of the egg whites into the batter
  13. Heat waffle iron
  14. Cook wafers one by one
