Stockpot - 5 liter
Step preview
- Add olive oil to a clean stockpot
- Heat - medium-high heat
- Add onion and carrot to the stockpot
- Sauté until softened while stirring occasionally - 5 min
- Add garlic clove to the stockpot
- Sauté until fragrant while stirring occasionally - 1 min
- Add vegetable stock, red lentils, corn kernels, ground cumin, curry powder, saffron and cayenne pepper to the stockpot
- Stir until combined
- Cook until simmering and cover
- Cook until tender while stirring occasionally - 15 min
- Purée carefully with stick blender until smooth
- Mix in lemon to the stockpot
- Season with salt & pepper to taste
- Serve immediately
- Garnish with dill, hemp seeds and chili flakes
