These moist, fragrantly spiced lamb meatballs are packed with flavour and simple to make. Don’t be afraid to use your hands to combine the lamb and spices well. The simple herby couscous takes minutes to make and cooling raita or tzatziki complete this tasty meal.

Step preview

  1. Add ground lamb, garlic clove, ground cumin, ground coriander and salt & pepper to a clean medium bowl
  2. Mix well
  3. Shape firmly into balls
  4. Add olive oil to a clean frying pan
  5. Heat in frying pan - medium heat
  6. Fry meat until browned and cooked through - approx 9 min
  7. Boil water in a clean kettle
  8. Add couscous to a clean heatproof bowl
  9. Pour boiling water to cover the couscous
  10. Cover with plastic wrap and let rest - 5 min
  11. Uncover then fluff with a fork
  12. Add couscos, meatballs and the rest of ingredients to a large serving ball
  13. Serve with generous spoonfuls of raita or tzatziki
