This is a brilliant way to use up leftover vegetable mash. This versatile vegetable hash is the perfect side dish, but topped with a fried egg it would make a quick, simple and tasty dinner.

Step preview

  1. Add water, carrot, sweet potato and rutabaga to a clean large saucepan
  2. Cook until softened - 10 min
  3. Add kale to the vegetables
  4. Cook until softened - 3 min
  5. Drain vegetables into medium bowl then set aside
  6. Add sunflower oil to a clean frying pan
  7. Sauté onion in the frying pan
  8. Stir wholegrain mustard into the frying pan
  9. Transfer vegetables to frying pan
  10. Add salt and black pepper to the frying pan
  11. Mash gently with potato masher
  12. Cook until lightly browned while stirring occasionally - medium heat
  13. Serve immediately
