This is the ultimate autumn comfort food. Apple and pork is a classic combination, and this quick creamy version combines the flavours you love in just 10 minutes. Crème fraiche helps balance the sweetness, but cream would also work well.

Step preview

  1. Add water and potato to a clean saucepan
  2. Boil until soft - approx 30 min
  3. Drain
  4. Mash with potato masher until smooth then set aside
  5. Add olive oil and unsalted butter to a clean frying pan
  6. Heat in frying pan - high heat
  7. Fry pork filet in the pork
  8. Cook until golden brown - approx 3 min
  9. Add apple and apple juice to the pork
  10. Boil in frying pan to simmer
  11. Simmer slowly in frying pan until well combined - approx 5 min
  12. Add crème fraîche and fresh sage to the pork
  13. Season with salt & pepper to taste
  14. Transfer potatoes to 2 large serving bowls
  15. Transfer pork to 2 large serving bowls
  16. Serve immediately
