Step preview

  1. Heat vegetable oil in a large saucepan over medium-high heat
  2. Add onion and cook until softened - 5 min
  3. Add cumin seeds and roast for approx 30 sec
  4. Then add the curry paste and stir everything together
  5. Add cauliflower, red lentils, basmati rice and vegetable stock
  6. Boil then reduce heat
  7. Simmer on medium low until just cooked - approx 12 min
  8. Mix in carrot to the large saucepan
  9. Heat
  10. Sprinkle with cashew nuts and cilantro
  11. Serve
