Step preview

  1. Add chicken breast to a clean plate
  2. Cut each breast in half lengthways but without cutting the whole way through.
  3. Flatten and brush with olive oil
  4. Season with salt & pepper generously
  5. Grill each side until golden brown - approx 3 min
  6. Add red onion, tomato, cucumber, fresh chili, cilantro and lime to a clean medium bowl
  7. Mix together
  8. Season
  9. Serve chicken hot with spicy salsa spooned over and around. Garnish with lime
